German manufacturer Miele has collaborated with viral 'Dubai Chocolate' chef Noel Catis on a limited-edition dessert trio that blends the two heritages together through uniquely crafted sweet treats.
“Since it's all about innovation, we have to rethink how we create desserts that are forward-looking in taste and that are also very accessible,” Dubai-based Filipino pastry chef Noel Catis told reporters at the launch of the collaboration.
He added, “As I always say, innovation keeps you relevant; it keeps you very much ahead as a chef.”
Mr. Catis said the innovative recipes of the sweets were rooted in the “nostalgia factor” of both European and Filipino cultures.
He said, “The key to creating something that resonates with all of us is nostalgia.” “I was really looking at aspects that remind us of being Filipino, but also take you to Germany, and that is already innovation in itself.”
The three sweets included in Miele's Innovation Series are Baraco-Dalandon Torte, Miele Honey Cake and The Green Forest.
The shared passion and fondness for coffee in both countries inspired Mr. Katis to create the Barako-Dalandon Torte. The viral chef upgrades the German torte by using baraco, a strong and aromatic coffee from the Philippines.
The boldness of Baraco complements the salted caramel and subtle citrus flavor of Dalandan, making it a perfect mood booster after a long day or even during an afternoon work break.
The sandy texture of the pieces also resembles ground coffee, which adds to the overall eating experience of the finely crafted dessert.
The Miele Honey Cake, on the other hand, is a “crowd favorite,” Mr. Katis said. Although small, the cake takes inspiration from the German apple strudel, offering a wide range of flavors ranging from cinnamon, walnut, vanilla and chocolate.
The white confectionary has a crunchy texture on the outside that balances the silky and smooth filling inside.
Meanwhile, the Green Forest is a light dessert that combines a flaky croissant with a Mister Cattis flavor take on the classic Black Forest cake.
“What liquor is in Black Forest? Cherry. So, we added cherry liquor to the pistachio,” Mr. Katis said.
The light salty flavor of the croissant, combined with the crunch of pistachios and topped with a thin chocolate disc, strikes the perfect balance between sweet and savory.
Although each pastry is different from one another, they all share Mr. Katis' signature ingredient – chocolate and texture, which makes them all cohesive yet distinctive.
The internationally renowned chef said, “Chocolate is only 10% of me being a chef. 90% also includes beverages, desserts, pastries.”
“It really gave me a chance to showcase my other skills in terms of flavor combinations,” he said.
Miele, which makes home appliances for kitchens, laundry rooms and floor care, was founded in 1899. According to Focus Global Inc., its partner in the Philippines for two decades, the Innovation Series follows the brand's “Forever Better” promise.
“The Innovation Series was born from that idea, to show how technology and creativity can come together to create something new,” Angela Sy, head of finance and strategy at Focus Global Inc., said at the launch.
